Here are some of our favorite recipes right now. Each of these are creations based on wonderful meals eaten at the restaurants, bars, and street vendors we’ve visited over the years. We’ve been fortunate enough to have met and even befriended a number of chefs in places like DC, Saigon, Fez, San Juan, and more. They’ve shared cookbooks and tips - and advice when we’ve gotten stuck. They’ve been generous in sharing their time and their craft and more importantly their food. They’ve all inspired and encouraged experimentation in the kitchen. There have been many more failures (although mostly edible) than successes and while we do not generally subscribe to the theory that the only way to succeed is to fail over and over, in the kitchen, that seems to be the way. We’ve tried to include all the ingredients in the lists, but proof-reading isn’t our finest skill, and so there are surely some omissions although those will usually be in the staples you have in the house anyway (salt/pepper/oil/etc.).
